Roasted Cauliflower and Chickpea Tacos

1 ½ Tbsp FRESH IS BEST TACO SEASONING

1 Tbsp Fresh Lime Juice 

1 Tbsp Olive Oil

1 Tbsp Water

1 can Chickpeas, drained and rinsed

1 small head cauliflower, washed and cut into bite size florets

FIB Corn Tortillas

1 cup finely chopped Red Cabbage

1 Jalapeno, sliced

1 large Avocado, seed removed and diced

Chopped Cilantro

Preheat oven to 400 degrees.  In a medium bowl whisk together the FIB Taco Seasoning, Fresh Lime Juice, Olive Oil, and Water. Stir in Chickpeas and Cauliflower florets. Place the seasoned Chickpeas and Cauliflower on a greased baking sheet. Roast for 30-35 minutes, until Chickpeas are slightly crispy and the Cauliflower is tender, stir occasionally. Remove from oven and set aside. Heat a FRESH IS BEST CORN TORTILLAS in a pan over medium heat until slightly crispy. Place some of the Chickpea and Roasted Cauliflower on the tortilla. Top with Red Cabbage, Jalapenos, Avocado, and Cilantro.  Drizzle FRESH IS BEST GUACAMOLE over the tacos and serve!
