1lb Yukon Gold Potatoes, peeled and quartered
2 tbsp Butter
2 tbsp Parmesan Cheese
1 container of FRESH IS BEST GARLIC SPINACH DIP
Salt and Pepper to taste
Place Potatoes in a large pot and cover with cold water, add 1-2 tsp salt. Bring to a boil and reduce heat to medium, simmer for 20 minutes or until soft. Drain Potatoes and return to pot. Add the Butter, Parmesan Cheese, and FRESH IS BEST GARLIC SPINACH DIP. Blend with a hand mixer until creamy. Season to taste with Salt and Pepper.
